Spaghetti Meatballs & Beef Mushroom Rice Bowl Recipes

We’re making classic Gluten Free & Egg Free Spaghetti Meatballs and a savory Ground Beef Mushroom Rice Bowl. So, let’s dive right into these delicious recipes!

**This healthy recipe is gluten-free (if you use gluten free noodles) and egg free. It does contain meat, but I speak on how you can create a vegetarian version of the Rice Bowl.
Today I am sharing with you a recipe in honor of my mother who used to always make spaghetti once a week.
And it was always the long noodles and it was always with ground beef.
This is my own personal take on one of my favorite recipes that I discovered a long time ago from Emeril Lagasse. Remember him? It’s a spaghetti meatball rendition.
My husband who does not really like spaghetti meatball, but likes his ground beef on rice. So I share with you an Asian recipe on what to do with ground beef and an Italian recipe.

First with the meatballs I chop up onions and garlic. Getting the pan heated and oiled. I buy the Costco brand extra-virgin olive oil.
Then caramelize the onions and the garlic in the pan.
I like to chop my garlic. It keeps it a lot more fresh and flavorful. Versus putting it in the mincer.
So as the onions and garlic are nice and golden and caramelized, then…

I add the ground beef. Now I get my ground beef from Costco also. So it’s quite a giant batch and I divide it into about six Ziploc large sandwich bags. And freeze what I am not cooking right away.
So I’m using one of the six bags, which is probably the normal portion that you would get at a grocery store, in a smaller package.

Then I add garlic salt, and pepper to the meat. This first meat I made was going to be the ground beef for my husband’s rice dish first. So just stir it and cook it. Let that brown in the pan.

Chop up mushrooms add half to the meat. Cook. And set aside for the meatball sauce.

I love just the plain white button mushrooms. Nothing fancy, just a nice, good. Punch of protein from the mushrooms. It is filling and delicious.
** Vegetarian option: And if you don’t want to use meat, you can just do the mushrooms with some veggies. I do a whole bunch of different veggies. If I don’t cook meat over his rice I will cook zucchini, broccoli, bell pepper. Like a stir fry of vegetables. With the mushrooms and the mushroom being the meat element versus the ground beef.

So on to my meatballs now. … Heat Olive in your Sauce Pot and caramelize 1 garlic clove and 1/3 of an onion.

So I’m just mixing in by hand the other half of the ground beef package with the chopped onions and the chopped garlic. Adding in Garlic Salt to mix.
The onions, were fresh so my eyes were watering at this point. It was Oh, so painful. So then these are going to, go in to the pot as you mold them into balls one by one, into the caramelized some mushroom and onion and garlic in the pot.
Add seasoning of garlic salt and some pepper.
And for my secret ingredient: Six chili powder. It just adds a bit more flavor and depth and spice.

Place them in a tight circle with one in the middle. Brown them on one side, flip them carefully with two spatula spoons.

Then cover the meatballs with your preferred tomato sauce until they are fully covered and submerged. Approximately 2 cups.

And then cover the meatballs with red sauce, and then I sprinkle more garlic, salt in, and then I cover and let it simmer.

And then you just bring another pot to boil for the water and then you cook up the spaghetti noodles (gluten-free if you wish). Whatever desired amount you want. I usually grab two full handfuls of tall spaghetti noodles.

I like to use a spoon ladle, cause I can get the meatballs and the sauce and just pour it over the noodles.
You could also get really fancy if it’s just maybe two of you and you have a big skillet, you can then place the sauce, the meatballs, and the noodles all together in the skillet and mix it up. And then put it in your bowls, but I like an easier cleanup. This is so much easier to clean, less, less things to clean.

And so then just add freshly grated Parmesan cheese to top and it is just delicious. You can see how amazing it is.
It’s so easy and simple. I think this is why my mom made spaghetti every week, because it was just a quick hardy comforting meal. And my kids love pasta.

Now to finish off the Rice bowl

Put the white rice in the bowl. Then add, from earlier, the ground beef mushroom / vegetable mixture that you cooked. *Of course you can only do one dish at a time. I just did it in this order to cook the ground beef before and have it ready for my husband so we could eat at the same time.
Place the mixture over top of the rice. Add pepper, Kimchi, and or Siracha sauce to garnish. To add a little flavor spice kick and some healthy nutrition to the meal.
